How many ways can you make chicken? Well, I have put together a simple casserole, so now we can add one more to the list!
Ingredients:
1 can cream of chicken soup
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 tsp onion powder
1/4 tsp ground pepper
3/4 tsp cajun seasoning
2 cups frozen mixed vegetables
1 lb boneless, skinless chicken breasts, cut into smaller pieces
1 cup French's French Fried onions, crushed
Directions:
1) Stir soup, water, rice, onion powder, black pepper, cajun seasoning, and vegetables in a large bowl. Spray of 13 x 9 pan with non-stick spray and pour mixture into it.
2) Top the rice mixture with the chicken. Season the chicken pieces with additional cajun seasoning.
3) Cover.
4) Bake at 375 F for 50 minutes or until chicken and rice are done. Top with crushed onion rings and bake for 5 more minutes.
5) Remove from oven and let sit for 5 minutes. Stir rice before serving.
6) Enjoy!
Note: I didn't have mixed vegetables, so I used frozen broccoli florets. Tasted great! I doubled the recipe to cover 5 adults and still have enough for 2 leftover lunches.
