One of my favorite cool weather dinners!
Ingredients:
Ham bone
Water
2 bags of dry split peas
4 carrots, diced
Salt and pepper to taste
Directions:
1. Cover ham bone with water and boil for 1 hour.
2. Remove bone and take meat off. Put meat back into ham stock/water.
3. Add 2 bags of split peas, diced carrots, and salt and pepper to taste.
4. Cook until peas are dissolved. If soup is too thick, add water to desired consistency.
Great served with rye bread for dipping... Enjoy!

ReplyDeleteLambAround... I made this using our Easter ham bone. Little did I know that we would be in the 40's (F) tonight and tomorrow! Since I'm the only one in my home who truly enjoys this, I froze it in individual servings to make the "yumminess" last even longer.

ReplyDeleteI usually make bean soup at least once a week during the cold weather months. I just throw in whatever leftover meat I have on hand: taco or fajita chicken, pulled pork bbq, spaghetti sauce, or plain ground beef. It's a good way to use leftovers without feeling like you're eating leftovers!
