Chocolate Chip Banana Bread
Ingredients:
2 1/2 cups all-purpose flour
1 cup sugar
3 1/2 tsp baking powder
1 tsp salt
3 TBS oil
3/4 cup milk
1 cup mashed bananas (2-3 medium)
1 egg
Directions:
1) Heat oven to 350 F. Grease and flour 9 x 5 x 3-inch loaf pan, two 8.5 x 4.5 x 2.5-inch loaf pans, or 12 muffin cups.
2) Measure all ingredients into large mixing bowl; beat on medium speed 1/2 minute, scraping side and bottom of bowl constantly.
3) Pour into pan(s). Bake loaves 55-65 minutes (muffins 25-30 minutes) or until wooden pick inserted in center comes out clean. Remove from pan; cool thoroughly before slicing.
Variations:
Chocolate Chip Banana Bread - Add 1/2-2/3 cup chocolate chips to the batter. Do not use mixer. Bake as directed above.
Banana Nut Bread - Add 1 cup finely chopped nuts to the batter; pour into baking pan(s) and bake as directed above.

ellen--this recipe looksso delicious. i used to have loads of bananas lying around at the end of the week and was always looking for ways to use them up...now hubster has taken to eating a banana every morning...and there are never any left for me to bake with at the end of the week :( i might just have to hide a few! thank you for sharing with tuesday night supper club!
