Cinnamon Raisin Bread (bread machine version)

For a 2 pound loaf:

1 1/2 cups water
2 TBS margarine or butter, softened
4 cups bread flour
1/4 cup sugar
1 1/2 tsp salt
1 1/2 tsp ground cinnamon
1 1/4 tsp bread machine or quick active dry yeast
2 tsp Bread Enhancer (Optional)
1 cup raisins

Measure carefully, placing all ingredients except raisins in bread machine pan in the order recommended by the manufacturer. Add raisins at the Raisin/Nut signal.

Select Sweet or Basic/White cycle. Use Medium or Light crust color. Remove baked bread from pan, and cool on wire rack.

* Note: Measure cinnamon carefully as too much will cause the yeast to slow down rather than grow. If your machine doesn't have a Raisin/Nut signal, add the raisins 5 - 10 minutes before the last kneading cycle ends. Check your bread machine's use-and-care book to find out how long the last cycle runs.
** I made this over the holidays and it came out of the oven about the time we were finishing dinner. Can I tell you, no one waited until it cooled! I enjoyed it toasted the next morning... of what was left!

  3. Somehow I've always had problems whenever I try making bread in my bread machine. The loaf comes out extremely solid and dense. But it looks like yours came out perfectly delicious.

  10. Pattie - Yes, I use Bread Enhancer in all my breads. The bread is softer/fluffier and it lengthens the shelf life of the bread. ~ Ellen

  17. Christy - You can make this with a stand-up mixer with dough hooks! Mix all the ingredients except the cinnamon and raisins using the mixer and dough hooks for 10-12 minutes. Cover and let rise in a warm place for about 1 hour or doubled. Punch down (my favorite part) and roll out into a rectangle. Sprinkle cinnamon and raisins, then roll up into a log. Place in loaf pan, cover, and let rise for an hour in a warm place. Bake at 350 F for about 25 minutes. Enjoy!

  18. This was the best loaf of bread I have ever made in my bread machine!! Eating it as I type!! I used 2 cups bread flour and 2 cups of white wheat and sub honey for the sugar. Did not have bread enhancer but it still came out so soft and fluffy! Will definitely make again! Thank you!!
