Bonnie Butter Cake

What are your cherished birthday memories growing up?  Mine is the CAKE!  Mom would make whatever we wanted for dinner on our birthday.  I always asked for (and received) homemade spaghetti sauce and Bonnie Butter Cake, but... not at the same time!  To this day.... many, many years later... I still make this cake for my birthday!  If my family is lucky, I'll make it on theirs, too!

Ingredients:

2/3 cup butter, softened
1 3/4 cups sugar
2 eggs
1 1/2 tsp vanilla
2 3/4 cups all-purpose flour
2 1/2 tsp baking powder
1 tsp salt
1 1/4 cups milk


Directions:

1)  Heat oven to 350 F.  Grease and flour (or PAM) baking pan, 13x9x2 or two 9-inch or three 8-inch round layer pans.

2)  In large mixer bowl, mix butter, sugar, eggs, and vanilla until fluffy.  Beat 5 minutes on high speed, scraping bowl occasionally.

3)  On low speed, mix in flour, baking powder, and salt alternately with milk.

4)  Pour into pans.

5)  Bake oblong 45-50 minutes, layers 30-35 minutes or until wooden pick inserted in center comes out clean.  Cool.

6)  Frost cake. 




Note:  I make homemade frosting using softened butter, 10x sugar, vanilla, and milk.  Vanilla Butter Frosting Recipe coming next week!

  2. Sounds amazing! I'm going to have to try this recipe, when I get better at baking, not sure I'm quite ready for cakes, but I'm going to save it.

  7. I LOVE the classic recipes from the older editions of the BC Cookbook! There's just something so... unpretentious (if you know what I mean?) about the dishes. Anyway. Thank you for sharing this; I need a good, standby cake recipe!

  8. I think my grandma used to do a cake quite similar to this one frequently for family dinners. They were always amazing.. but then I think you can't really go wrong with older recipes.. they knew their stuff back then lol.

  15. I love that you used a recipe from an old cookbook. I love old cook books because the ingredients are simple and real. No margarine or low-fat products. I always look for old cook books at garage sales and used book stores.

  26. NOTHING like a classic, homemade cake - especially a Betty Crocker recipe. I love getting back in touch with these good old-fashioned recipes and reconnecting with the times. Instant cake mix and such made life easier, but I think we've swung too far in one direction. More and more people are getting back to basics and I love it!
